A different take on the classic oat porridge, Semolina flavoured with piquant saffron is a great morning meal and best served with sweet apple slices and warm honey.
Serves 4
2 red apples, very thinly sliced
pinch saffron threads
2 cups unhomogenised organic milk
1½ tbsp ghee
¾ cup fine semolina
⅓ cup organic raw sugar
1 To make apple wafers, preheat oven to 150C (no fan). Put apple slices on a baking tray lined with baking paper and bake for 40 minutes or until crisp and dry.
2 Meanwhile, heat saffron and milk in a small saucepan until just about to boil. Remove from heat and allow saffron to infuse for 5 minutes.
3 Melt ghee in a medium saucepan, add semolina and cook over medium heat for 5 minutes or until semolina is golden. Remove from heat. Whisk in saffron-infused milk, 3 cups hot water and 3 tbsp of the sugar. Return to heat and cook, stirring until semolina thickens.
4 Serve warm semolina with apple wafers and a little of the remaining sugar.
Note: if the semolina thickens quickly on standing, add a little extra milk or water and gently reheat.
