Vanilla and Maple Syrup Almonds and Pepitas

Vanilla and Maple Syrup Almonds and Pepitas recipe, brought to you by MiNDFOOD.

Vanilla and Maple Syrup Almonds and Pepitas

Considered a superfood, almonds contain monosaturated (good) fat and dietry fibre and are a rich source of calcium and vitamin E.

Serves 4

200g raw almonds

1 tbsp ghee

50g pepitas (pumpkin seeds)

1 tsp vanilla extract

½ tsp rosewater

1 tbsp organic maple syrup

1 Soak almonds in cold water overnight. Drain. Pat dry using absorbent paper.

2 Melt ghee in a non-stick frying pan. Add almonds, pepitas, vanilla and rosewater and stir-fry over medium heat for 5 minutes or until almonds are golden.Add maple syrup and toss to coat. Allow to cool slightly before serving warm.
