1 cup quinoa
½ tsp ground cinnamon
½ tsp ground ginger
200g strawberries, sliced
1 tsp vanilla extract
4 figs, quartered
1 Cook the quinoa in a pan of boiling water for 10-15 minutes or until the ‘tails’ appear that indicate the quinoa is cooked. Drain well and spread out on a tray to dry.
2 Zest and juice the orange. Add spices, zest and juice to the cooled quinoa and mix to combine.
3 Put the berries, vanilla and figs into a bowl and gently mix to combine.
4 Serve bowls or glasses of the quinoa alongside the selection of fruit.
You can vary the fruit or grain you use in the salad. Try couscous, amaranth or brown rice, or give dried fruit a go – look for the fruit without preservative 220.
