Fresh Ginger Peanut Teriyaki Marinade recipe, brought to you by MiNDFOOD and Vitamix.

Fresh Ginger Peanut Teriyaki Marinade

This sweet and sour marinade is great for when you need to whip up a meal in a hurry. Keep in the fridge and add to your favourite meat or vegetables when cooking.

3/4 cup soy sauce

1/4 cup rice vinegar

1 tablespoon sesame oil

1 medium orange, peeled and halved

1/2 lime, peeled

1 tablespoon honey

1/4 cup fresh pineapple, cut into chunks

1 garlic clove

1 teaspoon ginger paste (or fresh ginger)

¼ cup brown sugar

1 cup peanuts

½ cup peanut butter (click here for a quick easy and natural recipe using your Vitamix)

1 Place all ingredients into Vitamix and secure the lid.

2 Select variable 1. Turn machine on and quickly increase speed to 10, then to high.

3 Blend for 30 seconds using the tamper to press the ingredients into the blades.

TIP: Store marinade in an airtight container and keep in the fridge for future meals.
