Makes about 30 small balls
1 cup salted mixed nuts
250g block cream cheese, at room temperature
350g tasty cheese, grated
1 small red onion, finely chopped
3 garlic cloves, crushed
2 tbsp lemon juice
1 tbsp caster sugar
1 tbsp mayonnaise
2-3 gherkins, finely chopped
1 tsp dry mustard
1 Put nuts into a food processor and pulse until finely chopped. Transfer nuts to a large sheet of baking paper. Put cream cheese into a bowl and whisk or beat with an electric hand beater until light and creamy. Add tasty cheese, onion, garlic, lemon juice, sugar, mayonnaise, gherkins and mustard. Stir until well combined.
2 Roll mixture into small walnut-size balls. Roll in chopped nuts until well coated. Transfer to a serving platter, before covering and refrigerating until required. Serve cheese balls with crackers.
