Raw Vegan Banana Cream Pie

You'll love this creamy raw banana cream pie, encased in a delicious nutty crust.

Raw Vegan Banana Cream Pie

Serves 4. Ready in 40 minutes.

Crust
¾ cup Ceres Organics Whole Almonds
¾ cup Ceres Organics RAW Deglet Noor Dates
4 tbsp Ceres Organics RAW Cacao Powder

Filling
¼ cup Ceres Organics RAW Cashews
¼ cup water
1 tbsp lemon juice
2 bananas

Topping
½ banana, sliced
2 tbsp Ceres Organics Pistachios,
chopped
pomegranate seeds (optional)

To make the crust, in a food processor blend the almonds until finely ground. Add the dates and cacao powder and process another minute or two until the mix starts sticking together when pressed. Press into the bottom and up the sides of a six-inch tart pan. Pop into the freezer for a few minutes to set.

Make the filling. Blend water, cashews and lemon juice until very creamy. This takes a few minutes. Add bananas and continue processing until very smooth.

Put in the freezer to cool and thicken for half an hour.

When ready to assemble, just scoop the cashew and banana mixture into the tart shell. Top with banana slices, pistachio nuts and pomegranate seeds.
