Quick and easy to make, this delicious salad makes the best of sweet, succulent prawns, pairing them with juicy watermelon and the salty flavour of Feta cheese.
Serves 4
3 limes, shredded rind and juice (you will need 1/3 cup juice)
1/4 cup extra-virgin olive oil
1 tbsp caster sugar
1 tbsp red wine vinegar
1 long green chilli, deseeded, finely chopped
1/2 bunch mint leaves, finely chopped
1kg large cooked prawns
1/2 small seedless watermelon, skin removed
1/2 small red onion, finely sliced
200g feta, drained, crumbled
1. Whisk lime rind, juice, oil, sugar, red wine vinegar, chilli and mint in a jug. Set aside. Peel and devein prawns, leaving tail intact.
2. Cut watermelon into 3cm pieces.Place watermelon into a large bowl. Add prawns, onion and feta. Gently toss until combined. Transfer to serving plates. Spoon over dressing and serve.
