Loukoumades with Passionfruit Syrup recipe, brought to you by MiNDFOOD.

Loukoumades with Passionfruit Syrup

These golden, crispy Greek doughnuts will melt in your mouth. Drizzle in sticky passionfruit syrup and serve with a dollop of creamy Greek yoghurt.

Serves 4

Passionfruit Syrup

1 cup honey

¼ cup caster sugar

½ cup passionfruit pulp

Loukoumades

2 x 7g sachets dried yeast

1 tbsp caster sugar

2 cups plain flour

vegetable oil, for deep-frying

Greek-style yoghurt, to serve

1 To make syrup, combine honey, sugar, passionfruit, and 100ml water in a small saucepan over high heat, stirring until sugar dissolves. Reduce heat to a simmer and cook for 5-7 minutes, or until mixture is thickened and syrupy. Set aside to cool.

2 Meanwhile, place yeast and sugar in a bowl with 250ml warm water. Set aside for 5 minutes, or until foamy.

3 Add flour and a pinch of salt, and mix with a wooden spoon until smooth and elastic. Cover and set aside for 1½ hours, or until it doubles
in size.

4 Heat oil in a large saucepan to 180°C. Drop spoonfuls of batter into oil and cook in batches, turning, for 3-4 minutes, or until golden and puffed. Drain on paper towel.

5 To serve, place loukoumades in serving bowls, drizzle with syrup, and top with a dollop of yoghurt.
