Chermoula

Chermoula is spicy paste consisting of coriander, parsley, garlic and onion. It is used widely in North African cuisine to flavour fish or seafood.

Chermoula is spicy paste consisting of coriander, parsley, garlic and onion. It is used widely in North African cuisine to flavour fish or seafood.

1 cup flat-leaf parsley leaves, chopped

1 cup coriander leaves, chopped

1 red onion, peeled and chopped

2 garlic cloves, chopped

2 tsp ras el hanout

½ tsp chilli powder

1 tsp paprika

juice of two lemons

¼ cup olive oil

1 Place all ingredients in the bowl of a food processor and pulse to a coarse paste.

2 Season with sea salt and freshly ground black pepper and refrigerate until ready to use.
