With the weekend approaching we thought it was the perfect time to celebrate using our favourite national dessert.

When it comes to weekend baking, whether you’re in New Zealand or Australia, no event is complete without the crowning glory – a summer fruit dessert.

Of course you can’t go passed the iconic Pavlova, quick and easy to assemble, the perfect combination of crunchy, fluffy meringue, sweet and tart fruit and of course mounds of delicious whipped cream!

Here we’ve compiled our four best variations on this classic sweet for your enjoyment:

Brown Sugar Pavlova and Peach Stack

Enjoy the sunny stone fruit season with this delicious twist on the classic pavlova. Using brown sugar in the meringue gives this pavlova a lovely golden hue and a hint of caramel to the overall flavour.

Raspberry Pavlova

This has to be the easiest way to decorate pavlova. Sandwich your favourite vanilla ice cream between two meringue halves and create a delicious, yet easy to make, raspberry coulis and drizzle liberally over the top.

Pavlova Roll

Indulge your taste buds with this mouthwatering new twist on the classic pavlova recipe. Create a light meringue and spread with fresh cream and add pink marshmallows and desiccated coconut, then roll. Cut and serve slices for an elegant presentation.
