Turkey and Peach Salad

Turkey and Peach Salad recipe, on MiNDFOOD.

Turkey and Peach Salad

Serves 4

1 green oak lettuce

250g turkey meat, cut into thin strips

4 large yellow peaches, cut into wedges

⅓ cup walnuts (or roasted hazelnuts), roughly chopped

¼ cup walnut oil (or hazelnut oil)

¼ cup peach juice (or apple juice)

2 tsp horseradish cream

sea salt flakes and freshly ground

black pepper, to taste

Put lettuce on a large platter. Top with turkey, peach and walnuts. Put oil, peach juice and horseradish cream in a screw-top jar. Season with salt and pepper. Secure lid and shake until well combined. Add dressing to salad just before serving.
