A great recipe for your next party of get together, serve this Moroccan-inspired dip will please any hungry crowd.
400g tin of Butterbeans, rinsed and drained
1/4 red Capsicum, deseeded
3 dried apricots
2 Tsp extra virgin olive oil
1 Tsp lemon juice
1 garlic clove
55ml water
1 tsp smoked paprika
1/4 tsp cumin
a pinch of cayenne pepper
salt & freshly ground black pepper
1 Put the butterbeans and the remaining ingredients in the Vitamix machine and secure the two part lid.
2 Select variable speed 6 and run for 1 minute or until well mixed, using the tamper to push the ingredients into the blades, then serve.
TIP: Cut your favourite flatbread into wedges and toast under the grill when serving up this dip.
