Sachie Nomura’s Teriyaki Chicken

Sachie Nomura's Teriyaki Chicken recipe, brought to you by MiNDFOOD and Sachie Nomura.

Sachie, chef and creator of Sachie’s Kitchen, shares with us her recipe for delicious teriyaki chicken.

Serves 4

4 Chicken thighs (boneless)

3 tbsp flour

Cooking Oil

Teriyaki Sauce:

75g Sugar

150ml Mirin Sauce

150ml Cooking Sake

150ml Soy Sauce

1 Combine sugar, Mirin Sauce, cooking Sake and Soy Sauce into a small saucepan and bring to boil. Lower heat to medium and simmer for a minute. Set aside.

2 Score the chicken and dust the chicken with flour.

3 Heat a pan over medium-high, add cooking oil and cook the chicken through – cook skin side first.

4 Add 120ml – 160ml of Teriyaki sauce in the pan and cook until the sauce becomes thicker and lightly caramelized.

5 Slice the chicken and serve on a plate. Garnish with chopped spring onion or toasted sesame seeds if desired.
