10g chia seeds
100g cacao powder
good pinch of salt
2 tsp vanilla essence or extract
250g almond meal
250g hazelnut meal
450g buckwheat groats
150 ml melted coconut oil
250 ml hot bean ground & drunk espresso
20 pitted & chopped medjool dates

Method:

Soak chopped dates in espresso for 10-15 minutes then process till smooth, adding vanilla and melted coconut oil.

Mix all other ingredients in bowl and add date mixture until all combined (you can also do this in a processor but pulse in the buckwheat last so it doesn’t crush)

Wet hands to roll balls, pressing your choice of whole nut into the middle and reshaping.

Refrigerate for an hour and dust with cacao or chia seeds to serve (or leave plain).
