Cheese Scones

MiNDFOOD has recreated the traditional cheese scone using our own version of Edmond's scone recipe. Try it out and tell us what you think.

Cheese Scones

Makes 8 large scones

3 cups plain flour

5-6 teaspoons baking powder

1 pinch of salt

75g butter

1 cup of grated cheese

half an onion, finely grated

1 cup milk, plus extra to brush

½ cup cream

grated parmesan for topping

Shift flour, baking powder and salt into a bowl. Cut butter into flour until to resembles fine breadcrumbs. Add ¾ of grated cheese and onion to mixture, and mix to combine. Add milk and cream and mix quickly using a knife to form a soft dough. Knead a few times.

Lay out baking paper and press scone dough onto this in a round formation. Cut dough into 8 triangles, like a pizza. Brush dough with milk and sprinkle with Parmesan and remaining grated cheese. Bake at 220C for 10 minutes or until golden brown
