Broccoli and Bacon Soup with Cheesy Shortbread

High in vitamin C, broccoli is the perfect base for a healthy winter soup. This Broccoli and Bacon Soup recipe takes just minutes to make, it’s topped off with a dollop of sour cream and a spoonful of crispy bacon. Cheesy Shortbread is the perfect side to the creamy Broccoli and Bacon Soup.

Broccoli and Bacon Soup with Cheesy Shortbread

Serves 4

Ingredients:

20g butter

1 tbsp olive oil

1 
brown onion, 
finely chopped

4 
rashers bacon, rind removed, diced

3 
heads of broccoli, 
florets removed

4 
cups vegetable or chicken stock

2 
rashers bacon, extra, rind removed, diced

2 tbsp sour cream

freshly ground 
black pepper

Method:

Heat butter and oil in a large deep saucepan over medium 
heat. When butter has melted, add onion and bacon and
cook for 5 minutes or until onion is soft and bacon golden.

Add broccoli to pan and stir until combined and coated with pan juices. Pour stock and 1 cup water into pan and bring to the boil. Simmer for 15 minutes or until broccoli is soft.

Using a puree wand or food processor, puree soup mixture. After the soup has been pureed, return to saucepan and place over a low heat to keep warm. Season with salt and pepper.

Meanwhile, heat a small non-stick frying pan over medium heat, add extra bacon and cook until crisp. Ladle soup into bowls. Top with sour cream, crispy bacon and black pepper.
