Beef and Corn Soft Tacos

Teamed with the sweetness of corn, this recipe is a great way to use beef or chicken mince to create a delicious Mexican meal that the family will love!

Beef and Corn Soft Tacos

Preparation time: 10 mins Cooking time: 10 mins Energy: 997kJ per taco

Makes 10 

1 x soft taco kit (kit includes- 10 soft tacos, taco sauce and taco spice mix)

2 teaspoons olive oil

500g lean beef mince or chicken mince

1 corn cob (kernels removed)

2 tomatoes, finely chopped

1 small red onion, finely chopped

Fresh coriander, chopped

1 baby cos lettuce

cup grated light tasty cheese

 

Heat oil in a frying pan.

Add the mince, stirring with a wooden spoon to break up any lumps, cook for 5 minutes. Add taco spice mix, 3/4 cup of water and corn kernels. Simmer for 2 minutes or until sauce thickens.

Combine tomato, onion and coriander to create a fresh salsa.

Warm soft tacos according to pack directions.

Build your own soft taco with beef, lettuce, tomato salsa, taco sauce and cheese.
