Chicken with Mango and Avocado Salsa
Mango and avocado are great accompaniments to tender roast chicken. If you prefer, you can use the barbecue, just heat it to high before adding the chicken.

Mango and avocado are great accompaniments to tender roast chicken. Serve with this simple and delicious roast chicken topped with the most refreshing and bright, mango and avocado salsa at your next Summer bash.

Chicken with Mango and Avocado Salsa Recipe

Serves 4

Ingredients:

2 tbsp preserved lemon, finely sliced

2 garlic cloves, crushed

2 coriander roots, scraped and chopped, reserve ½ cup leaves, chopped

2 tbsp olive oil

2 x 1.8kg chicken, halved

Mango Salsa

2 mangoes, chopped

1 avocado, chopped

2 tbsp lime juice

2 tbsp red onion, finely chopped 

Method:

Place preserved lemon, garlic, coriander roots, and olive oil in a large bowl and mix to combine. Add chicken and rub with marinade; coverand refrigerate for at least 2 hours.

Preheat oven to 200°C. Cook chicken on a preheated chargrill pan or barbecue over high heat for 4-5 minutes on each side, or until charred. Place on an oven tray lined with baking paper and cook for another 30-40 minutes, or until cooked through.

To make the mango salsa, place mangoes, avocado, lime juice, onion, and reserved coriander leaves in a large bowl and toss to combine.

Serve chicken with mango salsa and salad.
