5 eggs
2/3 cup caster sugar
2/3 cup citrus juice of your choice
125g butter, diced
Whisk eggs and sugar in a large microwave-safe glass bowl until well combined and pale. While whisking, slowly add citrus juice until combined. Add butter. Microwave on high, uncovered, for 10 minutes or until thick, whisking every 2 minutes. Spoon curd into a sterilised jar. Seal when cold.
