Lemon and Almond Friands

Lemon and Almond Friands recipe, brought to you by MiNDFOOD.

These almond friands are delightful, with a melt-in-your-mouth texture and lovely tartness from little bits of lemon studding the delicate cake. Made predominately from almond meal they’re quick and easy to make and will stay fresh for at least a week.

Makes 8–10

2 lemons, grated rind

200g almond meal

1 cup icing sugar

⅓ cup plain flour

5 egg whites

150ml olive oil

icing sugar (extra), to dust

1 Preheat oven to 200C. Grease 10 x 1/2 cup friand moulds or a 12 x 1/3 cup muffin mould.

2 Put lemon rind in a bowl and 
add almond meal, icing sugar and flour. 
Add egg white and mix well to combine. Stir in oil. Divide mixture between moulds and bake for 20 minutes or until they come away from sides of mould. Dust with icing sugar (extra). Enjoy these low-cholesterol friands in moderation.
