Layered Vegetable, Ham and Turkey Cob

Serves 6

1 cob loaf

1 large bunch rocket, trimmed

8 thin slices turkey breast meat

2 red chargrilled capsicums, sliced

1 large avocado, peeled, stone removed,
 thinly sliced

6 large thin slices ham

6 marinated or pickled artichokes

150g semi-dried tomatoes

Slice off top of cob loaf. Remove bread inside cob leaving a shell 2cm thick. Place a layer of rocket over the base of cob. Top with turkey, capsicum, avocado, ham, sliced artichokes, tomatoes, turkey, rocket, ham and avocado. Cover filling with top of cob. Wrap in plastic wrap and refrigerate for at least 4 hours.

NOTE: If you have any dips leftover from Christmas, mix with sour cream or cream cheese and spread inside of cob before filling.
