It’s easy to get your quota of veggies when you make soup in a Vitamix. In around five minutes flat, you’ll have steaming hot soup to enjoy for a healthy dinner.
Serves 4
250 g butternut pumpkin, peeled and cut into small chunks
½ green apple, washed, not peeled, cut in half
50 g (1 stick ) celery, chopped
2 carrots washed not peeled and cut into chunks
(375ml) 1 ½ cups water or home made vegetable stock
pinch cinnamon
pinch sea salt
Combine all the ingredients in your Vitamix container in the order listed and secure the lid.
Select variable 1.
Turn the machine on and quickly increase speed to variable 10 and then to high.
Blend for 5 minutes or until the soup heats up and steam starts to escape from the ventilation lid. You can choose to have this soup as warm or hot as you like. I like to run my Vitamix for 5 minutes until it becomes lovely and hot.
Serve in bowls sprinkled with fresh chopped garden herbs.
Tip: You can also add ¼ tsp of fresh grated ginger to help stimulate circulation and aid digestion. For added protein add 100 g cooked cannellini beans. Dollop over 1 tsp natural yoghurt before serving.
