Apple Cake with Apple Wafers

Apple wafers are great for decorating cakes and desserts or adding to a cheese platter. They’re also the perfect snack for children’s lunch boxes.

Apple Cake with Apple Wafers

Serves 6–8

Ingredients:

4 small (450g) red apples (Royal Gala is recommended)

2 tbsp caster sugar

1 tsp ground cinnamon

1½ cups plain flour

1½ tsp baking powder

½ tsp salt

¾ cup caster sugar (extra)

½ cup extra-light olive oil

2 eggs

¼ cup milk

1 tsp vanilla extract

apple wafers, to serve

thick cream, to serve

Method:

Preheat oven to 180C. Grease and line a 20cm x 10cm (base) x 7cm deep (6½ cup capacity) loaf pan with baking paper.

Cut apples into quarters and remove cores. Thinly slice and put in a bowl. Add sugar and cinnamon and toss until apple is well coated.

Combine flour, baking powder, salt and sugar (extra) in a bowl. Whisk oil, eggs, milk and vanilla in a jug.

Add oil mixture to flour with apple slices. Gently stir until well combined.

Spoon into prepared baking pan. Bake for 1 hour or until cake is cooked through when tested in the centre with a skewer. Stand for 10 minutes before transferring to a wire rack to cool. Serve cake decorated with apple wafers and thick cream on the side.

 

APPLE WAFERS

To make the apple Wafers. Preheat oven to 180C. Line a large baking tray with baking paper.

Using a small, sharp knife, thinly slice 2 apples from base of fruit. (There’s no need to remove the core or skin as both become tender during cooking.) Put ½ cup sugar and 1 cup water in a saucepan. Stir over medium-low heat until sugar dissolves and mixture comes to the boil.

Add apple slices and simmer for 8–10 minutes or until fruit is transparent. Allow fruit to cool in the syrup. Remove the fruit from syrup with tongs and put on a sheet of paper towel. Cover apple slices with another sheet of paper towel and pat dry. Transfer to prepared baking tray.

Bake for 20–25 minutes or until apple slices are dry and crisp. Cool on tray. Store in an airtight container for up to 3 days. You can make wafers using different apple varieties or pears.
