Flat Iron Steak Sandwich. I have created this one for a number of my mates and first time friends, and I can tell you they walk away saying it is the best steak sandwich they have ever had!

I know food is very subjective but that has got to count for something, right? If you’re cooking a BBQ for mates, using a flat iron, like this one from a provider like Jack’s Creek, is perfect for this kind of feasting dish. Thin slices go best and then really enjoyed by all on a great loaf of bread and the extra trimmings. No knife and fork required!

2 Tbsp Olive oil
1 Onion, sliced
2 tsp Honey
1 x 500g Flat iron steak
Pinch of Salt
Pinch of Pepper
Handful of Rocket
1 Ciabatta loaf
Sun dried tomato Sauce
1/2 Cup Sun dried Tomatoes
2 Tbsp. Horseradish
1/2 Cup Mayonnaise

Add 1 Tbsp. of olive oil to a pan on medium heat and caramelize the onion for 6-8 minutes. Drizzle in honey and allow to coat before turning off the heat.

For the sauce, boil the tomatoes for 2-4 minutes in a small saucepan or until soft. Drain and transfer to a processor with the horseradish and pulse until smooth. Fold tomatoes into mayonnaise in a small bowl and set aside.

For the steak, season with salt & pepper on both sides for 10 minutes prior to cooking. This will allow to get a super tasty crust. Drizzle with remaining oil and add to a skillet on super high heat.

Turn steak every 15 seconds for 2-3 minutes or until steak recoils quickly once touched and allow to rest.

Slice ciabatta loaf in half and place cut side down in the pan to toast and soak up all the juices for 2 minutes or until golden.

To serve, slice steak against the grain. Spread a layer of the horseradish sauce down on the bottom half of the bread, add the greens, the steak slices, the caramelized onions and then top with the lid of the ciabatta… enjoy!!!
