Carrot Top Pesto

Carrot Top Pesto
You won't waste the fresh green tops of your carrots any more with this ingenious, delicious pesto recipe.

1 bunch carrot tops, washed and finely chopped

a couple of cloves of garlic

the juice of  lemon and some rind

Enough olive oil for a good consistency

grated parmesan

salt and pepper, to taste

 

Pop all your ingredients into a hand held mixer or blender and pulse.

Taste and add more of the ingredients you like to get a thick consistency.

Serve on top of crusty bread, potatoes, eggs, fish or meat, or stir through pasta.
