Serves 4
500g beef mince
3 spring onions, thinly sliced
2 tbsp tomato sauce
1 tbsp barbecue sauce
1 tbsp Worcestershire sauce
1 egg, whisked
3 crushed Weet-Bix
pita bread, to serve
3 tomatoes, cut into wedges
1 avocado, cut into wedges
1 small red onion, thinly sliced
lemon wedges, to serve
Combine mince, onion, tomato sauce, barbecue sauce, Worcestershire sauce, egg and Weet-Bix in a large bowl. Form 2 tbsp of mixture into small balls. Thread 3-4 balls onto small metal or prepared bamboo skewers. Place onto a large plate or baking tray.
Heat a large frying pan, chargrill pan or barbecue hotplate on medium heat. Add 4-5 skewers at a time and cook for 8 minutes or until browned on all sides and cooked through.
Transfer to a tray and cover to keep warm. Cook remaining skewers. Serve with pita bread, tomato, avocado, onion and lemon wedges.
