ABC Nut Butter and Raw Chocolate Bark

ABC Nut Butter and Raw Chocolate Bark. Make your own delicious nut butter to distill the goodness and energy of nutrition-packed almonds, cashews and brazil nuts.

Boost your protein intake at breakfast by spreading ABC  nut butter on toast, drizzling over muesli and porridge or adding to smoothies. Stir ABC nut butter through vegetable curries and stews for a creamy sauce, or add to bean soups for an African twist.

ABC Nut Butter
Makes approx 2 cups

1 cup raw almonds
1 cup raw brazil nuts
1 cup raw cashews
½ tsp sea salt

Preheat oven to 150°C. Spread nuts on an oven tray. Roast for 20 minutes; shake after 10 minutes. Tip onto a tray; allow to cool until just warm. (Warm nuts will blend more easily.)

Put nuts and sea salt into a food processor or high-speed blender. Process for 1 minute. Stop and scrape down the sides, then repeat until a buttery consistency is achieved. This can take anywhere from 3 to 10 minutes depending on the machine. A few drops of 
olive oil can be added to loosen the mixture.

Raw Chocolate Bark
Makes 12 slices

⅓ cup cacao butter
½ cup virgin coconut oil
½ cup raw cacao powder
4 tbsp ABC nut butter
2 tbsp maple syrup
1 tsp pure vanilla powder
¼ cup goji berries
¼ cup pistachios, chopped
¼ cup coconut chips
2 tbsp cacao nibs

Place cacao butter and oil in a bowl; place over a bowl of boiling water. Leave to melt; remove. Stir in cacao powder, nut butter, maple syrup, vanilla and a pinch of sea salt. Keep stirring until smooth.

Line a tin (approx 25cm x 20cm) with baking paper; spoon in mixture. Sprinkle with remaining ingredients; refrigerate for 1 hour. Cut into shards. Store in an airtight container in the fridge.
