The results are in … and they’re delicious! The Silver Fern Farms Home Cook of the Year 2016 has been selected from the talented group of finalists.

Silver Fern Farms is delighted to announce that Kim Cormack from Wellington has won the Silver Fern Farms Home Cook of the Year 2016.

Cormack’s original recipe for Lamb Rump with Pistachio Crust & Kumara Mash appeared in MiNDFOOD October 2016. “A feast on a plate,” was how MiNDFOOD food director Michelle McHugh described the winning dish. “Kim’s dish was simple yet packed a punch with flavour. The aromatic crust covering the Silver Fern Farms Lamb Rumps kept them very moist and filled the air in my kitchen with the scent of rosemary and lemon. It was heavenly.”

A keen home cook who likes to work with seasonal produce, Cormack says she looked at a number of recipes to see how others cooked lamb rumps before deciding upon her original recipe. Cormack wins a farm stay, where she will be able to see first hand how Silver Fern Farmers raise their pasture-fed animals. Her prize also includes a gourmet dinner at a Silver Fern Farms Premier Selection Award-winning restaurant.

The two runners up are Siobhan Lenehan, whose Fennel & Cumin Beef Wraps with Salsa Verde were seen in the September issue, and Gomathi Rajasekaran with Summer Curried Lamb from January/February 2017.

Our Silver Fern Farms Home Cook of the Year was “the fussiest eater” as a child. “My poor mum battled with me every day to eat vegetables. Marmite sandwiches, raw carrots and potatoes were about my lot,” recalls Kim Cormack.

That changed in her 20s when she moved in with a girl who loved to cook. “She was always reading recipe books and since we shared the costs of groceries, I started to take more of an interest. Without her I would probably still be dining on ready-made meals. Or Marmite sandwiches.”

Kim and husband David live in Wellington, where she works for Tourism NZ and he runs a PR firm. Her favourite cuisine is Asian, particularly Thai – “I love anything that’s quick, simple and can be done in one pan.”

For her winning recipe, “I bought the Silver Fern Farms Lamb Rumps because they looked delicious, then I looked online at what others had done with the same cut of meat. I like to cobble together different parts of different recipes to suit my own tastes, always adding whatever I’ve got in the fridge or garden. “I find the more I read other recipes, the more I can figure out exactly what I want to do with my own and the more confident I am with substituting ingredients. Sometimes I get it wrong and we have to order pizza, but this particular dish came out even better than I had expected.”
