Foolproof Pastry
When it comes to making tarts, it pays to have a foolproof pastry recipe up your sleeve. Reliable and taking just minutes to make, this recipe will stand you in good stead for the perfect pie.

3 cups plain flour

160g butter, diced, chilled

2 eggs

1 tbsp chilled water

1 Place flour and butter into a food processor and process until mixture resembles fine breadcrumbs.

2 Add eggs and water. Pulse until mixture forms a dough.

3 Turn onto a lightly floured surface and knead until dough comes together. Form into a 3cm-thick round disc.

4 Wrap in plastic film and refrigerate for 30 minutes or until firm.

5 Roll pastry 
out between 2 sheets of baking paper until 3mm thick.
