No-Bake Ginger Goodies
With no baking involved, this recipe could not be easier. Sent in by one of our readers, it simply needs to stand in the fridge and, when decorated with icing and cherries, not only tastes great but looks impressive too.

Makes 54 small pieces

125g butter

½ cup brown sugar

1/3 cup sweetened condensed milk

½ tsp vanilla extract

250g packet plain biscuits, crushed

½ cup sultanas or dates, chopped

½ tsp ground ginger


For the Icing

2 cups icing sugar, sifted

½ tsp ground ginger

40g butter, softened

1 tbsp hot water

½ tsp vanilla extract

100g glacé cherries, chopped

½ cup walnuts, roughly chopped

1 Line a 30cm x 20cm slab pan with baking paper. Melt butter, brown sugar, condensed milk and vanilla in a saucepan over a medium-low heat. Add crushed biscuits, sultanas and ground ginger. Stir until well combined. Press mixture into prepared slab pan 
and refrigerate.

2 Place icing sugar and ginger into a bowl. Add butter, water and vanilla. Stir until well combined and a smooth icing forms. Spread onto slice. Sprinkle with cherries and walnuts. Refrigerate until set. Cut into small pieces and serve.
