Winter Mulled Wine
Mulled wine is the traditional drink of winter. It is usually made from cooking 
red wine and adding a variety of warming flavours.

Red wine (a dry red or chianti is good)

125g of caster sugar

3 cloves

1 cinnamon stick

1/2 teaspoon grated nutmeg

1 Place 125g of caster sugar and the peel of one lemon into a large saucepan. Add 3 cloves, 1 cinnamon stick and ½ teaspoon of grated nutmeg.

2 Add just enough red wine to cover the sugar 
and simmer until all the sugar has dissolved.

3 Bring the mixture to the boil for 
a few minutes, then reduce heat to low. Add the rest of the bottle of wine 
and heat gently until hot, but not boiling.

4 Strain before serving.
