Created by Ed Loveday from Darlinghurst Bar in Sydney, this cocktail is perfect for a warm summer's day. Using Loveday's favourite cider, Batlow Premium Cider, the cocktail combines the tangy flavours of lime, pomegranate and rum. Best served with plenty of ice in a large punchbowl.
Serves 4
75ml White Rum
250ml Pomegranate Juice
40ml Lime Juice
30ml Sugar Syrup
Handful of Fresh Mint Leaves
1 Batlow Apple (thinly sliced)
2btls Batlow Premium Cider
Combine all ingredients in a large punch bowl with plenty of ice and stir to combine. Ladle into individual punch glasses and garnish with a mint sprig and apple slice.
