What We Ate at the Golden Globes
MiNDFOOD has just finished dinner at the Golden Globes. This is what we ate.

The Beverly Hilton’s new Executive Chef Troy N. Thompson and Executive Pastry Chef Thomas Henzi are behind the menu for the 72nd annual Golden Globe Awards, which has just been served to 1,300 of Hollywood’s most celebrated in film and television (plus a gathering of the world’s top media).

Inspired by California’s abundance of fresh produce, The Beverly Hilton’s executive chefs prepared a three-course menu that included a Modern Waldorf Salad with Lemon Emulsion Dressing followed by an entrée duo of Roasted Onion-Marinated Filet Mignon and Slow-Baked Arctic Char with Potato Croquette, Heirloom Cherries and Tomato Fondue and Black Tuscan Kale. Dinner was finished with a dessert trio of Cassis Lemon Cheesecake, Chocolate Alliance Salted Caramel and Hazelnut Dacquoise.

“I take great pride in creating this menu for the Golden Globe Awards that’s as extraordinary as the awards ceremony itself,” said The Beverly Hilton’s Executive Chef Troy N. Thompson. “This year’s menu showcases the fresh, local produce that we always use here at The Beverly Hilton with exciting yet balanced flavors. It’s an honor to lead our team of 40 chefs and 100 culinary team members who have been preparing all year for this celebration of Hollywood’s best.”

Additional highlights of the menu reveal included a champagne cocktail tasting by Moët & Chandon, the official champagne of the Golden Globe Awards. This year, Moët & Chandon will co-star on the red carpet and tables at the Golden Globes with its family of champagnes. Stars will be served 1,500 Moët Impérial minis on the red carpet; 400 magnums of Moët & Chandon Grand Vintage 2004 and Moët Impérial Rosé at their tables during the awards ceremony; and 500 Moët cocktails served at the bars.

To adorn the tables and create an award-winning backdrop for the dinner, famed florist Mark Held of MARK’S GARDEN® used six varieties of roses, miniature orchids, and hydrangea accented with lisianthus. Vivid blocks of color are featured in each arrangement creating a dramatic impression worthy of the star-studded party.
